Simple Rice Pilaf

This is one of my favorite side dishes!  It is so easy and soooo amazingly delicious!  You are going to love it!  It's goes well with any main dish and it is great reheated too.  Sometimes I will heat it up for lunch alongside a corn tortilla filled with some leftover chicken that I've cut up and a little salsa.  Yum!

SIMPLE RICE PILAF

1 small - medium size onion
2 tablespoons butter, plus a little more for greasing dish
1 cup uncooked rice
2 cups chicken broth
Salt - to taste

1)  Preheat oven to 375F and prepare 1 quart baking dish with butter.

2)  Chop onion and saute in 2 tablespoons butter in large skillet.

3)  Stir in rice and cook until slightly browned.

4)  Pour in chicken broth, season as desired with salt and simmer 5 minutes.

5)  Place in baking dish and bake until broth is completely absorbed, 35-40 minutes.

6)  Fluff & serve.

NOTES:

~I like to use Jasmine rice.
~I buy chicken broth that does not contain any MSG - read some bad things about that stuff!!
~Check on it when it's towards the end of the cooking time, if all of the liquid gets absorbed - it will be perfect, but if you leave it in the oven much past that time, it will start to burn on the bottom.  Been there, done that!
